Honestly ever single class has fantastic solo build options, so if there are any that you are leaning towards because you like them just go for it. If you look up "gw2 (insert class here) open world solo build" you can find tons of very strong builds. That said I think the easiest right now are probably ranger, engineer, guardian, and necro.
Fable 2 I loved and I never disliked the absence of the Heroes Guild, walking into the ruined Chamber of Fate was such a memorable and powerful moment to me and I actually quite liked the premise of playing as one of the Last Heroes. I just wish the game would have had us restore the Heroes Guild, rebuild it, find and recruit new heroes etc.
GW1 was a game where every skill on every player's bar mattered, as the goal was often to curate 8 x 8 skills that can combine into some broken synergy. The coordination, timing and execution requirement was high. This is a game with high healing.

Guardian can be played in a variety of offensive or support roles (or a mix of them) - the class is incredibly good for a variety of content. Generally your meta weapons are melee and feel fun to use. Warrior is always useful for his unique buffs and power build run double axe, so another thing you could look at.
THe best heroes guild from my experience (and after creating a spreadsheet to calculate efficiency) are Frostleaf-Treebeast-Ivan-Betty-Samurai-ForestSeer. Frostleaf cause it will help with getting to the 1000x mark easier and really boost early game climb through floors 105 to when you can afford treebeast. NOw the other heroes it really doesnt
